A small (5 HA) vineyard of Merlot and Cabernet Franc on clay soils, Pailhaus uses concrete fermentation and maturation with 50% new oak, to bring out the best of the fruit-driven merlot (80%) and the aromatic and herbaceous Cabernet Franc (20%).
