Barossa folklore claims the pioneers were so frugal that when they killed a pig on the farm for meat and smallgoods, they used everything but the squeal.
When we make our Alicante Bouchet Rosè, the grapes are pressed immediately and so the skins are not used. As the keepers of Barossa tradition, we couldn’t allow this to go on. Now, immediately after the juice is drained, we crush Grenache and Mataro onto the Alicante skins and ferment them together before finally basket pressing. The addition of the Alicante skins make a critical contribution to this wine, enhancing flavour, tannin and spice.
